I removed the intake manifold to replace it. While I had it off, I noticed some yellow buildup on the intake valve. Is this anything to be concerned about?
As long as the sealing surfaces of the valve is still good I wouldn't worry about it. If you still have the manifold off see if you can scrape some of the yellow stuff off.

it's not rust the cylinder head is cast from alloy and rust on the valves would indicate a major problem on an a.c motor (there's no water to leak and oxidise)
That is a sulphur build up and is a natural deposit from combustion, but it should be a mid brown colour so the fact it's yellow confirms you have been running very lean.
