Or what if I just use a 6.5 stock roller set, I think I have a set somewhere. Would that be better for hilly areas?

Lots of Honda 50 modders mix their rollers when they don't have the correct gram weights to achieve the desired total mass. The Reflex 250s even came standard with 3 light and 3 heavy rollers from the factory. The Big Ruckus, with the same engine, had all 6 weights the same and it worked better.

Using a single 6.5 gram roller with a gang of 5 x 7.2s will cause an imbalance on the crank end, however slight. If you're going to use a 6.5, I'd recommend you install 2 and place them opposite each other to maintain batter balance in the variator casting. It will probably not make a huge change, but the RPM should go up a little for a given drive load.
