Did all headlights get the Siem badge stamped on the bezel?

If not which models got the badge?

Yes, if they were made by Siem. You would also see Siem on the tail light. I don't know all the models though.

My headlight plug and glass both have the SIEM badges / name. Why would someone swop out just the bezel which is the most durable part.

Im thinking that not all bezels came with the stamp.

Don't know why they changed it maybe it rusted or was dented. My understanding is if it was made by Siem it would be marked so. Probably your bezel is not made Siem.
