The thing a lot of people do, and I was told this growing up, is that you put the eggs in cold water and start timing when the water boils. Mom always made three minute eggs with this process. This is a HUGE variable. Stoves are different. Pan sizes are different. If you start your eggs always at the same temperature and add them to already boiling water, you are guaranteed that they start the cooking process in an environment that is 212ºF (100ºC) each and every time. Mine go in for six minutes and then a cold water bath to halt the cooking. They are never over-cooked.
Even Alex the French guy determined 6:30 was what h would call perfect.

When I was a kid we took a trip to Florida. The three boys - of which I am middle - all rode in the back of our ginormous pickup truck under the aluminum cap. It's ok, though, we had pillows.
Anyway, we were somewhere in the middle of the south when suddenly someone noticed my little brother wasn't there. We were down to two kids. Apparently Mom and Dad had left him at the last rest stop. I guess turning around and going back for him was the right thing to do. We found him in the bathroom going stall to stall flushing the toilets. I never had another opportunity come up like that again.

My dad went over to my great uncle's farm for something, took me along. We had an old DeSoto 2 door with a split front seat so you could pull half forward to access the back. Anyway, he came back, alone. My mother asked where I was. I would have paid to see the bewildered look on his face.
His excuse was that he thought I was hiding behind the seat, so I guess he thought it was good to go. Anyway, gas cost money (it was two miles away) so he decided to wait until they returned from a movie that evening. Might have been a good plan, except my great uncle liked to drink and great aunt chain smoked enough that the top half of the living room was blue smoke... I think my mom watched him like a hawk thereafter.... |
