A new headset won't be cheap. Finding a totaled S with an intact headset may be the best option.

It can be done for sure.

The only hitch I can think of is that you might possibly need to change the speedo unit to fit the top cover?? That's where things could get expensive. Someone else might know if this is the case?

Yes it can be done, but the wiring is slightly different as the S does not have a immobilizer so there is one wire extra or missing sorry i can not remember which way round, but yes it is doable
edit you will need the front panel ,rear panel and maybe handle bars as they have small spacers to support the top panel (but they are already welded on to the S hanbdle bars) and also the clocks
