I'm also from NY, the state not the City, and it always gets me the impression people not from here have of what it is like. Sure there are areas with large tracts of houses but there are many more that will make you glad your ride is running good and you don't have to try to walk for help! I own five acres of land and 98% of the time you can not tell which way the nearest house is from anywhere on the property! Like kz1000ST says I can go to just about anyplace in this state without once running on an Interstate.
For that matter I have rode from here to West Virginia or to the cost of Maine with little or no time on four lanes or Interstates.
Just go to this Google map and you can scroll north till you are in Canada and not see any Interstates
