I am a new owner and my newly purchased LX-50 displays oil indicator every time I start the bike. It goes off every time - after a few seconds. Is it normal or should I be worried? I checked engine oil level and it seems okay.

That's normal. It should go off when you start the bike. If it comes on when your riding you should pull over immediately (where it's safe to do so) and check the oil level.

once the oil pressure builds (when the engine is running) the light goes out.

it may flicker as you hit the button when you start it as well. All normal.
