I'm curious as to what a professionally restored 90SS would sale for? I haven't seen one on the market in some time, and once the restoration on mine is complete, I might sell it.

Depending on the quality of restoration... and willingness to sell to Europe.

7K to 11K (I am adding in a 2K fudge factor +/- for poor / superb examples).

If it was original... then wowser....

You are going to be hard-pressed to get your money back out of that deal if you paid for a quality restoration. Ride it and enjoy it for now. The value is not going to go down anytime soon.
