Since I need to replace my drive belt on my Et4 , I was considering ordering a Malossi variator as well since I will be in there anyway.

What weights or rollers would you recommend, with the consideration that my rather rotund arse weighs 250+?

Starting here Don't remember which episode it was but he says something about not buying a Malossi variator. I think he says sticking with the stock variator and changing the rollers for Dr.Pulley sliders.
If you use sliders general rule I am told around weights is to go 1 gram less than whats recommended if using rollers.

If you want to get better acceleration, and in view of your weight, go a further 1gm lighter than the general recommendations you find. But bear in mind that your fuel consumption will be worse if you frequently use the extra performance.

I've had good luck in the ET4 with the Malossi variator and the 9 gram weights it comes with.

(gm IMHO. I have a LX 150 and switched to them on my last belt and roller change. Big difference in both my low and top end speeds.
