Ok so I have got the replacement cable fed through - result
BUT

How do you get the old one off?
At the throttle end there is a top hat.
the cable goes into a slotted bush in the headset body
the bush moves down a bit but not enough to come out.
Do you just smack it with a hammer?

ok I was on scooterwest's u-tube and they are called cable seats in the US
cable guides in the UK

It looks like they fit from back, so tapping it out with should be ok.
I'm thinking sods law will probably make it disappear into the frame

The cable seat can be pushed out from front to back. Look under the headset and you will see the hole they go in. The seat should fall out on the floor or in your hand.

When replacing the cable, thread the cable back through the seat and through the hole. Pull hard on the cable so it can seat the outer into the cable seat.

Well it didn't fall out , probably from the grease.

Good job I didn't smack it with a hammer!!!
It helps to line the slot to 12 o'clock.
