Getting 750 in a few weeks, let's see how it does. Think I can get it remapped for a whole 6hp more and slightly higher rev limit.
In the circumstances you describe, a quick flick of the wrist will accelerate you to the point of speed you said you don't like ...
That said, the 750 is in a very different category when it comes to responsiveness. I adore my MP3 500 as a super practical and fun urban vehicle. But she's a heavy gal and not very responsive.
The 750 is no 150hp sports bike, but it is totally capable of out-accelerating most cars, even at elevated highway speeds.
I used to have a KTM Duke 1290 (180hp) and don't miss it at all. It's complete horsepower overkill these days, there are preciously few riders around that could control all those if the bikes weren't loaded with electronics to prevent you from braining yourself. Once, in the rain, the electronics on the Duke had a hickup when I was taking a left turn after the light went green. The bike nearly highsided me into geostationary orbit...
I was lucky to land on the tank on my b*lls and limp home... I much prefer the 98hp of my BMW R1100S with nice, gentle torque - no need for electronics other than ABS if you know what you do.
In a nutshell, the NC750X is plenty fast enough, imo, and I like speed.
