I just did the 10,000km engine oil and filter change on my 2007 GTS250ie (yeah, I only put a few hundred miles a year on it, as ride my motorcycles a lot more).

When looking at the service schedule, I see that the roller weights are listed as a 10,000km service as well.

Has anyone here gone longer on this interval, or am I asking for trouble waiting?

What about the belt? Is this a "while I'm in there" item too?

What is a good source for these parts?

I have the 300GTS and I change both belt and rollers every 7,500 miles. The belts are cheap, half the price of my Burgman belt. The Vespa belt is due for change at every 9,000 miles and as you say, the rollers at 6250. My rollers are always in good shape still at that mileage so I figured to let them go a bit longer and do the belt as the same time. After all, no point in doing the same amount of work twice within just a couple of thousand miles. I also replace the ramp plate guides at the same time. Those are the three little plastic slider bits on the plate at the back of the variator. They are cheap and I find it's best to replace them. That way you always have a nice smooth fully working tranny.

I'd replace the variator nut and clutch nut at the same time too as well as the curved Belfield spring washer (the one under the nut). The beauty of the GTS bikes is that everything is cheap to buy and plentiful. Good luck!
