As sbaert and Madison Sully mentioned its in the owners manual.

You can download an official Piaggio PDF version here http://manuals.piaggio.com/

There are also some free sources online but your milage may vary on accuracy. This one is from a 2016 Mp3 500 Sport. Page 18 - 19 mention the procedure to change units which is identical to the sequence posted by Madison Sully. My bike is configured for mph/ Farenheight using the procedures, it takes a few tries to get it to work but it is correct.
