Hi i have a ET2 that gets really hot when running at WOT or near WOT and it cuts out, when it stops i have to let it cool down for 5 minutes or so and it starts again but the engine won't run as intended. I have put a new CDI and nothing,

Intake manifold is new

Fuel tap is new

CDI is new

Air filter is new

Maybe a soft seize?

Is this a 2 stroke or 4 stroke? What oil are you using?

Hi i have an ET2 2000 that i crashed a few weeks back, thing is the fan cover shattered and is no longe usable, i went to the dealership and bought the same fan cover but not from piaggio, when the bike is running and the fan spinning it hits the cover, and makes a grinding sound so i assume is not the correct one...
I don't have any experience with an ET2 so I'm no help. I wonder if your overheating issue is related to your fan. I'm sure more experienced folks will chime in shortly.
Best of luck in getting it sorted.
