Trying to switch to a plant based diet. When I eat cruciferous vegetables I get a gas bubble that feels like a heart attack. I'm attempting to sneak them into my starches and this seems to be a good way.
There's a lot of claims that they're more nutrient dense and this way I don't have to buy organic to remove pesticides from my diet. My next step is strawberries and blueberries.
Right now I have Broccoli, red cabbage and the newest batch is arugula. I didn't like peas and sunflower is a PITA but I'll try again.
Coco coir is costly and I'm trying different ways. My cheapest way so far is a light layer of coco for natural nutrients, vermiculite and(drum roll) toilet paper. TP is easier for the root to punch thru than paper towels and vermiculite is 1/3 the cost of coco. Growing hydroponic uses chemical nutrients and I feel safer using small amounts of coco to feed them.
All my life I've said that if I'm going to grow anything, it has to be something I can eat.

Care to share details on what got you started on this path.
I have always been a vegetarian, I can and do cook all sorts of meats, sea food etc for those who wish to eat, but have relied on others tasting the food and give it a thumbs up.
My upstairs neighbors went all vegan last August and are very happy having cut out meat, dairy, fish etc out of their diets.
As a vegetarian I don't think I could ever play soccer for 90 minutes or train to be a top athlete etc, doubt any of the top athletes in any sport have a vegan plat based diet and are able to compete at the highest levels in their sport. I do think that protein intake for vegetarians is a different ball game as the density is not there i.e. 100 grams of chicken may have 70% protein while 100 grams of say beans will have maybe 30% of protein.

My LDL was 87. If I can cut it in half in 4 more weeks, I'll celebrate with a pasture raised and finished no antibiotic filet, some sweet potato air fries and some cherry (you know).
I am now oil, dairy and meat free but I still eat 1 egg a day. So not a vegan and I don't care about the poor animals.

Lol. I haven't ever eaten any animals, I have killed a couple to cook for others, I killed a couple of chickens and once a pig. So the reason to not eat meat etc isn't about health/faith etc for me. It is one of those things like smoking cigarettes, I never was/am or will be curious to try.
I hope you succeed in your mission to get your health in order to where you want it to be. Let me know when ya celebrate in style I will have a nice Gin & tonic and toast ya ....

Probably not suitable for hydroponics but a local mushroom grower was offering his used growing medium for free to any who wanted it. I didn't see it, but would seem to be a good soil additive.

This salad is today's lunch with pasta and marinara. Red cabbage MG, broccoli MG, organic spinach and organic carrots. Topped with oil free tahini maple mustard dressing and parmesan.
