So I did the Polini big bore kit for the 300gts, ran supremely well..... Checked the oil today, dipstick covered in mayo 😭

I'm an idiot. I don't know where I went wrong.

Get the oil that is in there out ASAP. The coolant can damage bearing surfaces.
Get some fresh oil in and run it for a minute.

Probably because people usually buy a Vespa because it's a Vespa and the GTS 300 is the biggest yet many of us wouldn't mind a bit more power (even if it's only a small amount)

Let's just face it, we all like tinkering/modding/tweaking our scoots even if it's just adding stickers, it's part of owning a scooter, sadly and occasionally it can go horribly wrong. Let's hope the OP can come to terms with what has happened and move on.

That and I was in an arms race with my dad on his HPE 😂

No tho.... I was talking to a guy with a kit fitted at a meet and he couldn't stop talking about how much it had improved the ride. So I had a few beers 😅 and decided I couldn't like without it.

I have a Hayabusa too, so being fast wasn't my only incentive.

The best bet it to take it apart and see whats going on.

This. Assuming most everything is right , maybe one of those cylinder head bolts was twisted rather than torqued, and did not get tight enough. I have had one snap on me and one twist without snapping. I think that is why, in the scooter west video, Robot double checks the final torque. So, take it apart, inspect, and (if appropriate) order a couple of new gaskets and a set of 4 cylinder head bolts and have another go.
