My speedo is yellowing how can I fix it?

Fix? Paint the bezel and replace the rubber button cover. It is obviously no longer sealing properly.

How is the lens and button cover removed, can you just replace the button cover or do you have to replace the lens

Looks like mould or water staining to me. The rubber bit can be pulled/pried out. To clean inside you would need to remove headlight cover, unscrew back half from the handlebars, then remove the gauge cluster and carefully remove the clear plastic cover, (fragile little plastic tabs).
