Having sough inspiration from this site on a number of occasions I think it is time to give something back. I have done a write-up of modifications for the Vespa GTS 300 HPE on my own homepage http://stenberg.dk/Vespa300hpe.htm. These mods are focused on getting it ready for summer road/camping trips.
* Side cases (Monokey / GIVI Trekker Dolomiti)
* Spare fuel canister
* GPS "cockpit"
* Side stand foot mod
* Speedometer fix
* Oil pan inspection glass
* Bag hook replacement

The Fehling rack turned out to be quite a big project. The GPS holder is a bit of a mess to look at - but it does the job. There are mixed opinions on flip-out side stands - but I like this one. I love oil pan inspection window. And I think it is a must to replace the plastic bag hook

Well, you have certainly gone to town in equipping the scooter for a worldwide tour! I would though, be a little worried about the risk of overfilling those panniers and causing some instability. The sheer width (at least judging by your picture from the rear) would be of concern too. A good rule used to be no wider than your handlebars or mirrors, that way if they could get through a gap, so could everything else!

Thanks, I took it for a cross country trip *) last year and stability seemed pretty good - probably because the weight is also pretty low and I did not go off-road.

And ... yes it is pretty wide, so no lane splitting I did not notice it on the road - probably because I was doing the trip on my own and did not have to share the lane with other MCs.

Only downsides was I could not get the hang of setting it on center stand with the left pannier on, because it blocks the center stand "step" - it might be possible to pull the Vespa up from behind with some training. Also the panniers are sticking out into "the wind" so I did notice reduced top-speed on motor-way in headwind.

*) It's Denmark, so getting cross the country is basically a one-day drive
