Reviewing the part number listings it appears that the correct levers for the MP3 500 from 2016 onwards are 1C001294 (same for front and rear brake).

Will anyone know what other part numbers are compatible?

It's hard for me to believe that only this 1C001294 lever model works and that there aren't other Piaggio/Vespa/Aprilia models that don't use levers compatible with the master cylinders used by MP3s. Or in other words, that MP3s use an exclusive master cylinder for them.

Any insight?

AFAIK, 3rd gen MP3s (2014-2023) except Yourban models all use the same brake components.

I think the same but something changed in mid 2016 production for the 500, and the part number change and in example all the aftermarket manufacturers only do it until 2016 I can see part number 1c001294 and 1c000809

And in the Piaggio catalog (that is the strange part that I can't explain myself) no other Piaggio or Vespa scooter use that part numbers, any idea what can be the reason (assumptions are fine)?

Are you sure the difference in the 2 parts isn't just the finish of the lever?

Reason? Mine is a 2015 which came with bare (unpainted) levers. I swapped in a brand new set of black painted levers from a 2017. No installation issues and the levers work fine, although hindsight the unpainted version is preferable. The painted levers show wear from use.
