I certainly can't speak for all chefs worldwide, but I can say with reasonable certainty that the chefs of the western world are largely in agreement about kosher salt being the One True Cooking Salt.

By the western world I assume you mean the US. The rest of the western world hasn't even heard of it and don't actually use it.

I actually don't have any bug about it, if I need salt to cook with, I don't give a rat's arse what I use. Any salt will do. That includes Kosher, Maldon, sea-salt and table salt.

Probably not. I don't know how Kosher salt got its name (anyone?) but it is invariably salt from saline evaporation, with whatever minerals were in that saline. It won't have added iodine or anti-caking agents, unlike table salt which will - usually table salt is from rock salt.

Anyone else here remember buying a large block of rock salt, and grinding it down yourself? I had great fun as a kid doing that.

The "kosher" in kosher salt doesn't really have anything to do with actually being kosher, and it is not certified as such. But virtually any salt would probably be capable of meeting the basic parameters of being kosher, if it were produced under rabbinical supervision.

It is called "kosher" salt because it is used in the koshering of meat.

And, as it happens, people who cook for a living swear by it and have done so for several decades now.

One brand in particular is the universal choice within the US: Diamond Crystal Kosher Salt, primarily due to its consistent flake texture and the lack of any anti-caking agents or iodine.

(I just checked my box of Diamond Crystal and it is in fact certified as kosher).
