Was looking at the wiring diagram for my scooter and was wondering if the blinker delete could be the cause of my dashboard not lighting…

Unlikely. Unless you made a mistake getting wires mixed.
You prolly didn't get the harness plugged back in dash completely.
Or have an exposed wire that blew a fuse.
