I'm taking off an aftermarket exhaust from my 2023 Sprint, and replacing it with an OEM 2020 exhaust. Do I need to remap or something? Or just plug and play?

Idk, my guess yes since the aftermarket was installed at a Vespa dealership. Is it safe to ride it with the OEM on my way to the dealership, like 10 miles? Not sure how much usage would hurt the engine before remapping.

Ask the dealership if they remapped it when it was fitted - I doubt very much they would have done - who would have provided the re-map code? The exhaust manufacturer? Liability issues say no. Piaggio certainly wouldn't provide new mapping for aftermarket stuff. Any warranty would have flown out of the window.

I'd just replace with OEM exhaust and have done with it.

Nobody remaps in the US. You will be fine. Might even run better with factory exhaust.
