So if I want to replace the mirrors on my LX with something different, what exactly do I need to be looking for? Do i just need to make sure the threads are the same size? Would ones listed as "universal" work without any special adaptors?

It's tough to say whether universal mirrors will work or not. You are correct in the assumption that the threads need to be the same. Even if they are not, there are ways around that by using adapters. What mirrors did you have in mind?

The mirrors on the Vespa (and most scooters) use 8mm threads. Most motorcycles use 10mm.

I got some adaptors (I think they are made by EMGO) that let you use the 10mm mirrors on the vespa.
