o Parking brake: The Metro has a small piece of metal that swivels in from the brake handle to hold the rear brake lever engaged. Really handy at lights with hills
o Locking centerstand: Metro had a lever under the seat to lock the centerstand down
o Turn signal relay: A relay clicks when the turn signals are on. No buzzer please
o Sidestand: One that stays down and had the interlock to prevent starting when it was down
o Two volume horn with two position switch. First click to beep like the existing horn and pushing in all the way to engage a Stebel-like horn
o Seat position: Place it it a little further back and put more support on the sides.

Not a lot of scooters have a parking brake, except for some of the larger ones, that I'm aware of. Never heard of a locking centerstand, that sounds neat. Somebody somewhere might make a clicking (non-buzzing) signal indicator, if you look enough.
I bet you could modify the sidestand to have a kill-switch, if you're good with electrical stuff. I'm sure the snappy-spring could be modified too, but I'm not sure how. My spring must not be that great, or something, because the side stand will still stay down even when I move the bike off it. I have to kick it back up, every time, and it's always been like that. I rarely use mine, though.
I haven't seen it done on a GTV, but a couple people here have installed a second switch when they install their Stebel horn, so they can use either, or both. I personally don't see how there would be room in that cramped legshield to have both, but I'm sure it can be done with enough elbow grease.
A lot of people have issues with the standard GTV seat. Many people replace it with a GTS seat, which should bolt right on, without any modifications. They even make a GTS seat with the same kind of leather as the GTV seat, so it's still classy. Or you could always go completely custom and get Pirate Upholstery to make exactly what you want.

I would like this as well. Both of my Hondas ('84 Aero and '01 Elite) had this and I used it all the time. Its handy when you're parked on a grade and need both hands free.

Its handy when you're parked on a grade and need both hands free. +2 - could also use this feature on my other scoots along with the GTV - had the PX at a liquor store earlier today and the parking there is with a grade and this sooo would have helped but I didn't drop the Summit (beer) so it all worked out OK
