I seem to be having trouble accessing the bolts that hold on my top box, in order to remove it, can anybody give me any tips?

If you open the top cover of the top case you should see some screws on the bottom. Those are holding the top case onto the rear rack. If you loosen the screws, you will be able to take the case off the rear rack.

Yes, it is actually quite easy to remove. There is only one bolt really, it is accessible from inside the topcase. Open it up, remove the "carpet" from the bottom of the case and it exposes a bolt with a D ring on it. Unscrew that and it loosens the topcase from the rack. Then it should be able to be pulled backwards off the rack.

if it's anything like most vespa rear racks, there will be about four bolts securing the rack to the scooter body. two of these can probably be seen by looking underneath the rack, others you may have to hunt for (on the ET4 and GT racks, for instance, there is a plastic cover on top of the rack that has a couple of bolts underneath it). i'm not familiar with the exact configuration of the rack on the S50 but it should be something along those lines. take out all the bolts and you're done.

There are a couple of points where the rack connect to the grab bar and then another where it connects to the scooter. Remove the two bolts where the rack connects to the grab bar. Then remove the cover over the mount connecting it to the scooter itself. You should find another bolt or two (I'm not sure how many) and then the rack should come off.
