Having had issues fitting some crash bars, I thought to undo the grab rail where it fits under the seat, in order to make the whole thing easier.

To access the grab rail bolts either side of the seat, the plastic plate where the battery lives has to be removed. The battery cover and the four small screws all undid fine, but this big screw wouldn't budge.

I was hesitant to go at it for fear it was also holding something crucial in place underneath (thinking it's bigger for a reason), and it's not shown in the manuals on MV.

I managed to work around the crash bar fitting without undoing the grab rail but wondered if anyone knew does this screw simply hold the plastic plate in place ?

Yes it does. Undo it with a ratchet with a star bit in it so you can apply more torque. Nothing strange about this one, other than it won't budge.

I've got a ratchet and bits. I'd have had a go but knowing my propensity for calamity it'd be holding the engine on or something. So thought best not.

I think it is just to strengthen the plastic around the latch area. As far as I remember.
