Just picked up a used GTS 250ie. Looks like I need to replace the tires. Can you give me (or point me to) what you'd consider best? I'm in Portland, OR so rain is quite frequent. I'm also 6'3" and about 250lbs.

Since you will ride on wet roads frequently................. The Heidenau K66 would be very good on your GTS. They also get a lot of miles before wearing out.

Heidenau K-61 is the best tire going, but the K-66 may be better for a wet environment.
