Can someone show a picture of the 250 or 300 with foot pegs?

I read that he used a p200 crash gard was wondering what it looked like and how it was implemented.

Doesn't exist. Not as a product, anyway. You could potentially mount footpegs on the crash bars, but it would only be for the passenger.

FWIW... The Vespa GTS crash-bars actually make decent footrests for the passenger.
